Paleo Snacks To Enjoy

It’s only been 2 weeks since my hubby & I started our Paleo diet & finding great paleo snacks has been so fun!  Jack has already noticed much less aching in his joints; knees & ankles especially!  It just goes to show that gluten can be your enemy, causing tons of hidden inflammation and a life of pain, fatigue, weight gain and more.

So I want to share 3 great paleo snacks that are simple & tasty too.

Paleo Snacks Recipe #1: Kale Chips

paleo snacksKale Chips:  Do you like Kale?  I love it but must say that these chips are my FAVE! They are crunchy, just the right amount of salt and excellent for you!  Kale is a major superfood!  Also VERY easy to make.

1 bunch fresh kale (wash & dry)

1 TBSP Olive Oil

Sea Salt to taste

Directions: Cut kale into chip size strips, toss in olive oil & salt.  Lay flat on cookie sheet & bake at 225 for 15-20 minutes.

Tip: I wash my kale and lay out to dry for a few hours. Then use a spice called Spike which is a must have in my kitchen.  You can use nutritional yeast, sea salt, chili powder, lime juice or what ever you want to flavor your chips.

Paleo Snacks #2: Quinoa Pudding

paleo quinoa puddingQuinoa Pudding:  I needed something to satisfy my sweet tooth so I found this awesome paleo snacks recipe at www.fivehearthome.com and tried it last week.  The pudding is similar to tapioca & is high in fiber & protein too!

Quinoa Pudding: 4 to 6 servings

Ingredients

  • 1 cup quinoa
  • 4 cups unsweetened coconut milk (from carton, not can)
  • 1/3 cup maple syrup
  • 1 1/2 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/4 teaspoon sea salt or Himalayan pink salt

Directions

  1. Place quinoa in a mesh colander. Rinse thoroughly with cold water and allow to drain (this is important & will make sure your pudding is sweet).
  2. In a medium (approximately 3-quart) pot, combine quinoa, coconut milk, maple syrup, vanilla, cinnamon, and salt. Bring to a boil over medium heat. Reduce heat to a low simmer and cover, leaving the lid cracked so that some steam may escape. Simmer for 25 minutes, stirring about every 5 minutes.
  3. Remove the lid and continue simmering for 5 more minutes or until pudding has thickened and the quinoa has absorbed most (but not all) of the milk. Remove from heat.
  4. Pour into bowls and allow to cool for a few minutes before serving (pudding will continue to thicken as it cools). Sprinkle with additional cinnamon, if desired.

I added slivered almonds & blueberries to mine, then sprinkled with more cinnamon and a hint of nutmeg…marvelous!  This is a new favorite paleo snack  or simple yet healthy breakfast.  It can be served warm or cold & stores in fridge for 3-4 days.

Paleo Snacks Recipe #3:  Paleo Strawberry Ice Cream

Strawberry Ice Cream!  I love it!  So many people (including me) think that diet literally means, to go without.  Not true.  Why not have all the “bad” food made with great ingredients?

Ingredients:

  • 1 lb unsweetened frozen strawberries (or your favorite berry)
  • 14 fl oz coconut milk (canned, whole not lite)
  • ¼ tsp liquid stevia extract, or 2 tsp maple syrup
  • ½ tbsp lemon juice

Directions: Put everything in your food processor and run it until strawberries are ground up. (Note: This may require prying a strawberry off the blade a few times.) Keep in mind that if you have some left over, you can store it in a snap-top container in the freezer, but because of the lack of sugar, it will freeze rock-hard—so take it out of the freezer a good half hour before you want to eat it and let it soften a bit.

It’s an excellent gluten free, low glycemic, vegan, paleo snack that satisfies any sweet tooth!  Next week I’m working on paleo breads, pastas and sourdough recipes…because my family loves all of them & refuses to go without.
