Gluten Free Dairy Free Coconut Cookies

gluten free dairy free recipesMany of you know that Jack & I went gluten free/paleo as of Jan 6, 2014 and we are loving it.   Surprisingly enough it has not been that hard to give up gluten grains!  But, I love a sweet snack every now and then so I’ve been searching for healthy gluten free, dairy free recipes that taste amazing.  Last week I learned how to make Quinoa pudding…YUM!

Last night I found this recipe…thanks to www.mylivingnutrition.com and it stole the show.  These little guys will keep you coming back for more.  They are no-bake, gluten free, dairy free, paleo snacks that literally blow your mind.  I mean really…how can something that tastes so good NOT be bad for you?

Gluten Free Dairy Free Coconut Cookies:

Cookie Ingredients:

  • 1 cup shredded unsweetened coconut
  • 3 TBS coconut nectar or maple syrup
  • 2 TBS softened coconut oil or butter
  • 1 tsp vanilla extract
  • a pinch of salt

chocolate ganache ingredients:

  • 2 TBS coconut oil, melted
  • 1 TBS raw cacao powder or cocoa powder
  • 1 TBS coconut nectar or maple syrup
  • a few grains of salt

Instructions

  1. Put all of the cookie ingredients in the food processor and process until mixture sticks together. Scoop into 1 TBS sized balls. Place in the fridge for 5 minutes while you prepare the chocolate filling.
  2. Mix everything for the filling, in a shaker bottle or small blender until emulsified.
  3. Set aside.
  4. Remove the coconut balls from the fridge and flatten them into more of a cookie shape. Create an indentation in the middle of each cookie for your chocolate ganache.
  5. Carefully spoon the chocolate ganache into each indentation. Return to the fridge for 5 min for the ganache to set.
  6. Enjoy! No Baking Required!

Now, my kids have trained their minds to think that paleo desserts, gluten free, dairy free and healthy snacks will taste like cardboard so they are always reluctant to try new foods.  These little cookies lasted about 30 seconds and everyone was begging me to make more.

They are quick, easy and good for you.  They taste marvelous without the gluten and dairy to cause inflammation!  Coconut naturally helps kill candida & reduce inflammation in the gut.  These gluten free, dairy free cookies are amazing snacks for school, home or work.

My kids are becoming believers in real food and that’s what matter most to me.  Keeping them healthy and showing them how to live with real food, real conversation & real community before the virtual world completely takes over!
